1 1/2 c. creamy peanut butter
3/4 c. coconut milk
3 Tbsp. water
3 Tbsp. lime juice
3 Tbsp. soy sauce
1 Tbsp. fish sauce
dash of red pepper flakes
1 Tbsp. ginger root, minced
3 cloves garlic, minced
1/4 c. cilantro, chopped
In a saucepan, over very low heat, mix all the ingredients except the cilantro. Keep over low heat for 45-60 minutes, stirring occasionally. Mix in the cilantro just before serving. Serve warm.
