Whole Wheat Scones

250g bread flour, plus extra for dusting
250g whole wheat flour
75g caster sugar
30g baking powder
75g butter, softened
2 eggs, beaten
1 egg, beaten separately for eggwash
270ml milk

Preheat oven to 400 F.

Line a baking tray.

Put the flours, sugar, and baking powder into a large bowl and mix together.

Add the butter, eggs, and milk. Using your hands, mix together thoroughly for 6 minutes.

Turn the dough out onto a lightly floured surface, and, using a rolling pin, flatten it to about 1 1/2 inches thick. Using a round biscuit cutter, cut out the scones.

Put the scones on the baking tray and brush with the eggwash. If you have time, chill the eggwashed scones in the fridge for 30 minutes before baking.

Remove the scones from the fridge and brush the tops again with eggwash, being careful not to let it dribble down the sides as this will hinder their rise in the oven. Bake for 15-20 minutes, until golden brown. Transfer to a wire rack to cool a little. Serve with jam.

Coconut Scones with Choc Chips

Scones
3/4 c. coconut milk
1 egg
2 tsp. vanilla
1/4 c. sugar
2 - 2 1/2 c. flour
1 Tbsp. baking powder
1/2 tsp. salt
3 Tbsp. butter, very cold, and cut into small cubes
3/4 c. mini choc chips
1/2 c. sweetened flake coconut
2 Tbsp. coconut milk (for brushing)

Frosting
1 c. confectioners' sugar
2 Tbsp. coconut milk
1/4 c. sweetened flake coconut

To make the scones: Preheat oven to 375 F. Line a baking sheet with parchment paper. Set aside.

In a medium sized bowl, combine the coconut milk, egg, vanilla, and sugar. Set aside.

In a large bowl, whisk the 2 cups flour, baking powder, and salt together. Cut in the cold butter with a pastry cutter (or two knives if you don't have a pastry cutter).

Mix the wet ingredients into the dry. Fold in the coconut flakes and choc chips.

Knead on a floured surface 4-5 times. Here is where you may need the extra 1/2 cup flour. Add gradually.

Move to the lined baking sheet and cut with a knife or pizza cutter. I recommend flouring whatever you are going to cut with. Probably multiple times. The dough can be sticky. Cut into slices like you would a pizza.

Brush slices with the coconut milk.

Bake 18-22 minutes. Let cool.

To make the frosting: Mix the sugar and milk together. It is a thicker frosting, so then using a knife just spread the frosting over the scones gently (after they have cooled). Sprinkle with the flakes.

Eat them warm or cold. With jam or plain. Enjoy!

Pumpkin Scones

Scones:
2 c. flour
7 Tbsp. sugar
1 Tbsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
1/4 tsp. allspice
6 Tbsp. cold butter
1/2 c. pumpkin puree
3-4Tbsp. half and half
1 egg

Confectioners Sugar Glaze:
1 c. confectioners sugar
2 Tbsp. milk

Spiced Glaze:
1 c. + 3 Tbsp. confectioners sugar
2 Tbsp. milk
1/4 tsp. cinnamon
1/4 tsp. nutmeg
dash of ginger

Preheat oven to 425 F.

Line a cookie sheet with wax or parchment paper; set aside.

To make the scones: In a large bowl, stir together the flour, sugar, baking powder, salt, cinnamon, nutmeg, ginger, and allspice. Using a cheese grater, grate in the cold butter. Mix until the texture resembles coarse cornmeal.

In a separate bowl, whisk together the pumpkin, half and half, and egg. Add the wet ingredients to the dry ingredients. Stir until just combined (adding more half and half if the dough is too dry).

Form dough into a ball. Pat out onto a lightly floured surface, forming into a 1 inch thick rectangle. Using a knife dipped in flour, cut the dough into 3 equal parts. Cut each portion into 4 triangular pieces. Place on prepared baking sheet.

Bake 13-16 minutes, or until light brown. Remove to a wire rack to cool.

To make the sugar glaze: In a small bowl, mix the ingredients together until smooth. When the scones are cooled, use a pastry brush to brush on the glaze. You can do several coats. Allow to firm.

To make the spiced glaze: In a small bowl, mix all the ingredients together until smooth. Spread over each scone and allow to firm before serving.

Lemon Cranberry Scones

Flour and cranberry mixture
1 1/2 Tbsp. freshly grated lemon zest (about 2 lemons)
2 1/2 c. all-purpose flour
1/2 c. + 3 Tbsp. sugar
1 Tbsp. baking powder
1/2 tsp. salt
6 Tbsp. cold unsalted butter, cut into bits
1 1/4 c. fresh cranberries, chopped coarse
1 large egg
1 large egg yolk
1 c. heavy cream

Preheat oven to 400°F. and line a large baking sheet with parchment paper.

In a food processor pulse flour, 1/2 cup sugar, baking powder, salt, butter and zest until mixture resembles coarse meal and transfer to a large bowl.

In a small bowl toss together fresh cranberries and 3 tablespoons sugar and stir into flour mixture.

In another small bowl lightly beat egg and yolk and stir in cream. Add egg mixture to flour mixture and stir until just combined.

Before baking

On a well-floured surface with floured hands pat dough into a 1-inch-thick round (about 8 inches in diameter) and with a 2-inch round cutter or rim of a glass dipped in flour (I had to continually dip the cup back in the flour after cutting out each scone) cut out as many rounds as possible, rerolling scraps as necessary. Arrange rounds about 1 inch apart on baking sheet and bake in middle of oven 15 to 20 minutes, or until pale golden.

Grandma Johnson's Lemon Scones

I don't remember where I got this recipe, but it's my favorite scone recipe.

1 c. sour cream
Before going into the oven
1 tsp. baking soda
4 c. flour
1 c. sugar
2 tsp. baking powder
1/4 tsp. cream of tartar
1 tsp. salt
1 c. butter
1 egg
1-2 Tbsp. lemon zest

Fresh out of the oven
Preheat oven to 350 F. Lightly grease 2 baking sheets. In a small bowl, stir together sour cream and baking soda. In a large bowl, combine flour, sugar, baking powder, cream of tartar, and salt. Cut in butter with a knife or a pastry blender (I also hear grating very cold butter works great). Combine egg with sour cream mixture. Add the lemon zest into the flour mixture. Stir the sour cream mixture into flour mixture until moistened. Turn dough out onto a lightly floured surface. Knead briefly. Roll dough out into a 3/4 in thick round. Cut into 12 wedges and bake for 12-15 minutes or until golden brown. I used a scone pan, and made 15 scones with this recipe.
