Banana Crumb Muffins

1 1/2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
3/4 tsp. cinnamon
3 bananas, mashed
1/2 c. sugar
1/4 c. brown sugar
1 egg
1/3 c. vegetable oil
2 tsp. vanilla

1/3 c. brown sugar
2 Tbsp. flour
1/8 tsp. cinnamon
1 1/2 Tbsp. butter

Preheat oven 375 F.

Line a muffin tin with paper muffin cups.

In a large bowl, combine the flour, soda, powder, salt, and cinnamon. Set aside.

In a separate bowl, mix together the bananas, sugars, egg, oil, and vanilla.

Stir the banana mixture into the flour mixture. Stir until just combined.

Scoop the batter into the muffin cups evenly.

Top make the topping: In a small bowl, combine the sugar, flour, and cinnamon. Cut in the butter (I usually grate mine) until evenly distributed. Sprinkle over the muffins.

Bake muffins for 18-20 minutes or until a toothpick inserted in the middle comes out clean.
